Since a kid, I have always loved sausage rolls; especially the finely spiced ones you could get back in The Netherlands from the HEMA. I always thought that making your own sausage rolls would be a fairly complicated thing to make…. until I came across this recipe from a friend of ours.

Ingredients

  • 500 g Pork Sausages (the fattier the better) (approx. 6-7)

  • 1 Egg

  • 3 Sheets of Puff Pastry

  • 1 tsp Salt

  • 1 Carrot

Directions

  • Preheat the oven at 200 degrees and line a baking sheet on a baking tray.
  • De-freeze 3 sheets of Puff Pastry
  • Peel and rasp the carrot in a small bowl.
  • Add the salt to the rasped carrot and mix it well. Let is sit for a few minutes.rasp carrot sausage roll
  • Take the “meat filling” out of each sausage.take meat filling out of sausage
  • Divide the sausage meat over the 3 sheets where each sheet has 2 “long sausages.sausage meat on puff pastry sheet
  • Take the carrot/salt mixture out of the bowl and squeeze out the excess water.
  • Put a little bit of the carrot/salt mixture besides the sausage meat.carrot salt mixture next to sausage roll meat
  • Crack and whisk the egg in a bowl to create an egg wash.
  • Add some egg wash with a brush on the middle and all sides of the sheet of puff pastry. This is the glue to keep it all together!
  • Fold the edge tightly together with the filling, and roll it till the other edge of the pastry.rolled sausage rolls

  • Place them into the preheated oven for approx. 25-30 minutes until they are crispy and gold brown!
